The fish is baked in the oven covered with tomatoes, onions, garlic and parsley. It is usually a summer dish when the tomatoes are red and sweet, and it can be eaten hot or cold. It is very easy to make and very tasty!

 

 

 

 

 

Ingredients
1 large fish (whole or cut in thick slices) (Code, halibut or any large fish you like)
3 tomatoes
1 onion
2 cloves garlic
½ cup olive oil
½ bunch of parsley finely chopped
½ glass white wine
3 potatoes
Salt, pepper

 

Directions

Clean and wash the fish and rub some salt over it and inside the cavity – if you are using a whole fish. If you can’t clean the fish yourself, you could ask your fishmonger to do it for you.

Peel and wash the potatoes and cut them in rather thin round slices. They must be thin so that they cook quickly. Place half the potatoes in the baking pan, sprinkle them with some salt & pepper and place the fish on top. Place the rest of the potatoes around the fish. Slice the onion and the garlic thinly and scatter them on the fish. Slice the tomatoes and place them on the fish as well. Sprinkle some salt and the parsley over the tomatoes. Drizzle the oil and the wine over the fish and bake it in a pre-warmed oven at 170oC for about 40 – 50 minutes, depending on the thickness of the fish.
