Black eyed peas, are small beans and they can be cooked in many ways. Today, we will do a very simple and quick recipe. It is a healthy, refreshing salad and you can add anything you fancy – chopped parsley, tomatoes, celery, mint, peppers. This is the basic salad and you can let your imagination go wild.





1 cup black eyed peas
2 spring onions chopped
4 -5 tablespoonfuls olive oil
2 tablespoonfuls vinegar



Wash the beans and place them in a pot with enough cold water to cover them. Boil them for 5 minutes and drain them. Fill the pot again with water and add the beans. You should put enough water because the beans will absorb a lot. Simmer them for about 30 – 45 minutes (it depends on the beans). Check them now and then to see if there is enough water in the pot and taste them to see if they are done. They should be soft but still hold their shape. When ready, drain them and place them in a platter. Sprinkle some salt over them, drizzle olive oil and vinegar. You can add as much oil and vinegar as you like. Sprinkle the chopped spring onions on top. You can add any other herbs you like, toss and serve.

This salad can be enjoyed by vegetarians and is popular during periods of fasting.
