A very tasty and wholesome cake without eggs or butter. The tahini gives it a nutty flavor and the raisins add sweetness as the cake itself is not really sweet. Of course, you can add more sugar and/or honey if you wish. You can also add other dried fruit cut in small pieces if you don’t like raisins.
Ingredients 2 ½ cups flour 1 cup brown sugar ½ cup honey 1 cup oil ½ cup walnuts roughly chopped up 1 cup raisins 2 cups tahini 1 cup lukewarm water 1 tablespoonful orange zest 1 teaspoon powdered cinnamon ½ teaspoon powdered cloves 3 teaspoons baking powder 2 teaspoons baking soda
Directions
Put the tahini in a bowl and add spoonfuls of the lukewarm water while stirring, to thin down the tahini. Put the oil in the mixer and beat it until it is creamy. Add the tahini, the sugar and the honey. Beat for 1 minute longer.
In another little bowl put the raisins and the walnuts and dust them with a little flour. This way, they will not go to the bottom of the cake when you add them to the batter.
Sift the flour and add the cinnamon, cloves, baking powder, baking soda and zest. Add it to the tahini mixture. Mix well. Finally add the raisins and walnuts. Gently stir. Brush a cake tin with a little oil and add the batter. Bake at 180oC for about 50 minutes. Test if it is done with a toothpick.
Let the cake cool a little and take it out of the tin. Sprinkle liberally with powdered sugar.
