Wash the greens for your salad and place them in the salad bowl. You can cover the bowl and keep it in the fridge if you are not going to serve it immediately. Prepare the vinegret and keep it separately. Pour the vinegret sauce over the salad just before you serve it otherwise the salad greens will wilt and look terrible. Toss the salad and serve.
