French fries with eggsThis is another favorite childhood dish! It is easy to make and moms used to make it very often in summer. We used to spend all day swimming and playing in the sea and we came home for lunch, hot and salty. By the time we had a quick shower, the potatoes with the eggs were on the table together with a huge Greek salad, feta cheese and bread from the baker’s baked in the old-fashioned wood burning oven. Now and then I cook this dish, and I am transported back to those good, carefree, summer days.

 

 

Ingredients
2 large potatoes per person (approximately – depends how hungry everybody is)
2 eggs per person
Salt, pepper
Oil to fry the potatoes
A couple of knobs butter or margarine

 

Directions

Peel, wash and cut the potatoes for French fries. Fry them in hot oil. When cooked, remove and drain on absorbent paper. Sprinkle salt on the fries.

Beat the eggs lightly and add some salt and pepper. Take a pan and put two knobs of butter. Add the fries and the beaten eggs. Cook until the egg sets. Flip over and cook for a few minutes more. Serve immediately!
