This is an easy frittata and you can use any left-overs you happen to have in the fridge: fries or boiled potatoes, cauliflower, zucchini, broccoli etc. You can add sausage, roast or boiled chicken, ham and cheese of your choice. This frittata is for four persons.
Ingredients 1 large sausage, sliced 8 link Vienna sausages 1 – 2 zucchini sliced 1 cup mushrooms sliced 2 cups French fries 4 – 5 large eggs Feta cheese crumbled A little feta cheese crumbled Salt, pepper A few drops Tabasco if you like 3 – 4 knobs of butter
Directions
If you have left over French fries, zucchinis and mushrooms, you can use them. Otherwise, prepare the fries, sauté the zucchinis and the mushrooms with a little olive oil. Sauté the sausages in the same pan, as well.
Beat the eggs with the salt, pepper and the Tabasco sauce if you are using. Arrange the sausages, fries, zucchinis and mushrooms in a large non-stick pan. Place 3 – 4 small knobs of butter around the pan. When the butter melts, pour the beaten eggs over the vegetables and sausages. Sprinkle the crumbled feta cheese on top. Let it cook on medium fire.
Turn on the oven on broil. When the frittata is cooked at the bottom, put the pan in the oven and broil until the top is cooked and puffed up.
If your pan has a handle that may be damaged by the heat in the oven, cover it well with a double piece of aluminum foil. Your frittata should be ready in about 8 – 10 minutes.
Slide it on a large platter and serve it with a large green salad.
