Greek PizzaWho doesn’t like pizza, and this is a very tasty Greek pizza! It is topped with feta cheese, Kalamata olives, peppers and mushrooms.  You can make your own dough, or if you prefer you can use ready bought pizza dough.

 

 

 

 

 

Ingredients for the dough
300 gr. Flour
1 sachet dry yeast
1 tablespoonful sugar
4 tablespoonfuls oil
1 teaspoonful salt
Lukewarm water about 1 ½ cups

 

Ingredients for the topping
3 very ripe red tomatoes grated
1 onion grated
4 tablespoonfuls olive oil
1 tablespoonful tomato paste
Salt, pepper
A little sugar
1 teaspoon oregano
Any herbs you like: chopped parsley, basil, mint
1 – 2 green peppers
1 – 2 red peppers
1 cup slices mushrooms
7 – 8 Kalamata olives without the stone
2 cups grated gouda cheese (or any other cheese you like)
1 cup feta cheese crumbled
A little oregano to sprinkle on top
3 tablespoonfuls olive oil to drizzle over the topping

 

Directions

Put the yeast in a bowl with the sugar and 2 – 3 tablespoonfuls flour. Add enough lukewarm water and mix to form a runny paste. Cover the bowl and leave it in a warm place.

In a large bowl put the flour and the salt and mix it well. Add the oil and the yeast mixture. Start kneading adding lukewarm water little by little, until you have a soft elastic dough. Smear a little oil all over the surface of the ball of dough, put it back in the bowl, cover it and leave it in a warm place to prove.

In the meantime, prepare the tomato sauce. Put the onion in the pan with half a cup of water and simmer it to soften it. Then add the oil and sauté the onion. Next add the grated tomatoes, the tomato paste diluted in a little water, salt and pepper. Simmer the sauce until all the liquid has been absorbed. Taste it and if it is a bit sour, add a little sugar and the oregano. You can also add any of the herbs you like best. Let the sauce cool.

Oil your pizza pan lightly. Roll out the dough to fit your pan. The dough should be rolled out thin. Lay the dough on the pan. Spread a thin layer of tomato sauce on the dough. Put as much grated cheese as you like over the tomato sauce. Decorate your pizza with the peppers, mushrooms, and feta cheese. Roll the edge of the dough inwards to make a nice finish.

You can sprinkle more grated cheese on top if you wish. Sprinkle some oregano over the pizza and drizzle the oil.

Bake in a preheated oven at 200oC for about 30 minutes.
