Champagne should be served cool but not freezing cold (7 – 8oC). Fill a champagne bucket with ice and immerse your champagne bottle in the ice. The champagne glasses should be tall and narrow, with a rather narrow opening on top so that the champagne keeps its aroma. You shouldn’t fill the glass more than 2/3, as the champagne gets warm very quickly. Good champagne is recognized by the quality of the foam, which must form a ring round the glass. Furthermore, the bubbles must be very small.
Champagne is a wine that should be drunk when quite young, 3 – 7 years old. It can be kept in the original bottle for 5 – 10 years, in a place where the temperature is always the same without any fluctuations.
