Ingredients for salad 2 small cucumbers sliced 3 radishes sliced 6 – 7 cherry tomatoes cut in half 3 cups various greens (arugula, lettuce, lollo rosso or any other red-leafed lettuce) A few Kalamata olives without stones, cut in half
Ingredients for dressing 2 tablespoonfuls Greek yogurt low-fat 2 tablespoonfuls cream cheese low-fat 2 tablespoonfuls mayonnaise low-fat 3 tablespoonfuls olive oil 1 green onion finely chopped 1 tablespoonful parsley finely chopped 1 tablespoonful mint finely chopped 1 tablespoonful dill finely chopped 1 clove garlic minced 4 tablespoonfuls milk 3 tablespoonfuls feta cheese crumbled A few drops Tabasco sauce Salt, pepper
Prepare the dressing first. In a bowl mix together the yogurt, cream cheese, mayonnaise, parsley, mint, dill, garlic, green onion, salt and pepper. Add the oil and Tabasco sauce and mix well. If the mixture is too thick, add the milk little by little stirring the whole time, until it has a somewhat runny consistency. Add the crumbled feta cheese.
Wash and prepare the salad greens. Pile them on a platter. Decorate with the cherry tomatoes and the olives. Drizzle the dressing over the salad.
This dressing can be used as a dip as well if you omit the milk.
