It is a fantastic salad that can accompany any dish or can be eaten with some toast and a little cheese perhaps for lunch or a light dinner. You can use any salad greens you like and you can find at your greengrocer’s, as well as boiled vegetables and pulses. The quantities are approximate, and you can add and subtract ingredients according to your taste and requirements.




1 cup shredded cabbage
3 – 4 cups different kinds of lettuce roughly chopped (romaine, butter lettuce, iceberg etc.)
1 bunch rocket
1 – 2 cucumbers sliced
2 – 3 green onions sliced
1 cup corn
½ cup black eyed peas
½ cup chick peas
2 medium potatoes boiled sliced
2 – 3 carrots boiled sliced
2 – 3 hard boiled eggs (if you like)
Olive oil
Vinegar or lemon juice



The previous night soak the chick peas in water, and the following morning boil them until soft. Alternatively, you may use tinned chick peas. Boil also the black eyed peas. They don’t need soaking and don’t take long to cook.

Boil in a little lightly salted water or steam the potatoes and carrots.

Wash, dry and chop up the lettuce, rocket and green onions, peel the cucumber and slice it.

Put everything in a serving platter and decorate according to your taste. Sprinkle some salt, and drizzle olive oil and vinegar or lemon juice over the salad.
