I love mushrooms and I use them everywhere I possibly can. As I hate to be without them when I need them, I buy quite a large quantity especially when they are on special offer. First, I wipe them with a damp cloth. Never wash mushrooms or soak them in water. Mushrooms are like sponges and they absorb water, which renders them tasteless. I then slice them up, and sauté them in a little oil. Put about 1 tablespoonful of oil in the pan and add the mushrooms in one layer. Don’t put too many mushrooms in your pan at the same time because they will boil. Don’t use salt either, because they will release their juices. When lightly browned, remove them from the pan and place them on a platter. When they are cold, put them in plastic bags and pop them in the freezer.
