An eggless, very easy and extra quick recipe. The cookies are extremely tasty and very light. While baking, the aroma of the oranges wafts throughout the house.






1 glass fresh orange juice
1 glass sunflower oil
1 glass sugar
The zest from 2 – 3 oranges
Self-raising flour (about 800 gr)
1 egg for eggwashing the cookies before baking



In a large bowl put the orange juice, the oil, the sugar and the orange zest and stir. Add the flour, a cupful at a time. At the beginning you can stir it in the liquids, until it is absorbed, and you carry on adding the flour until you have a more solid mass, and you will have to knead the dough with your hands. The dough must be rather soft and pliable.

Oil a baking pan. Take handfuls of the dough and you can shape it in any way you like. Lay the one cookie next to the other, until all the dough is finished. If you wish, you can beat an egg with a little water and brush the cookies. Bake in a preheated oven at 180oC for about 30 minutes, until they are lightly browned.

You can enjoy these cookies any time of the day, and they are delicious dunked in milk, coffee or tea.
