The salad with pasta and tuna fish is tasty, filling and versatile and can double as an appetizer served on small pieces of toast with a little cucumber and a sliver of tomato on top. It is also very good as a quick lunch, served on toast with a green salad on the side.
Ingredients 2 cups boiled rotini pasta (you can use any pasta you like) 1 large can tuna in water drained and mashed 1 medium onion, grated 1 red pepper, diced 1 ½ cups mayonnaise light 3 tablespoonfuls mustard ½ teaspoon lemon juice 2 tablespoonfuls evaporated milk A little salt and pepper 2 – 3 gherkins diced (depends on their size and your taste) 2 – 3 drops Tabasco sauce Or a chili pepper minced.
Directions
In a bowl mix well the mashed tuna, onion, mayonnaise, mustard, evaporated milk, lemon, Tabasco sauce and/or minced chili, salt and pepper. If the mixture is too thick you can add a couple more tablespoonfuls of milk. The mixture must be neither too runny nor too thick. Add the pasta, the diced red pepper and the diced gherkins and mix everything well. Taste and adjust seasonings.
Place in a serving platter and decorate with more gherkins, and sliced boiled eggs, olives and whatever else you fancy!
