This is a very tasty dish. Tender pork chops, fluffy mashed potatoes and creamy mushroom sauce. It requires a bit of time to prepare and cook everything, but it is well worth the trouble. You can garnish it with peas, carrots even brussel sprouts or any other vegetables you like, and accompany it with a large green salad.

 

 

 

 

Ingredients for pork chops
2 pork chops
¼ cup olive oil
2 tablespoonfuls each, sage, chives, thyme, oregano
1 tablespoonful mustard
1 clove garlic minced
Salt, pepper
½ cup wine
 
Ingredients for mushroom sauce
2 cups mushrooms
1 – 2 tablespoonfuls butter or margarine.
½ cup wine
1 clove garlic minced
Salt, pepper
1 ½ cups evaporated low fat milk or cream
½ teaspoon corn flower
 
Ingredients for mashed potatoes
2 large potatoes cut in 4 (or 4 – 5 smaller ones)
2 tablespoonfuls butter or margarine
1 cup (approx.) warm milk
Salt, pepper

 

Directions for the pork chops

Place the chops on a plate. In a bowl mix well the olive oil, herbs finely chopped, mustard, garlic, salt and pepper. Brush the chops with the marinade on both sides and leave them for as long as possible, 1 – 2 hours.

At the end of that time, put the chops in a non-stick pan and sauté them on both sides. Add the wine, and let it evaporate. Keep the chops warm.

Directions for mashed potatoes

Boil the potatoes in salted water until they are very soft. Drain them, and return them to the pot. Add the butter or margarine and mash them up with a masher adding the warm milk until you have the consistency you like. You may need less milk or in some cases a little more. Add salt and pepper.

Directions for the mushroom sauce

Chop the mushrooms in smaller pieces and place them in a pan with a little butter or margarine and sauté them lightly. Add the garlic and continue for 3 – 4 minutes more. Add the wine and let it evaporate. Add salt and pepper and then the milk or cream. Keep a couple tablespoonfuls of cold milk and dilute the corn flour. Last, add the diluted corn flour. Stir, simmer for a couple of minutes, taste to adjust seasonings and serve with the chops and the mashed potatoes.
