A traditional, very tasty dish that can be enjoyed by vegetarians and everybody else as a main dish. It is very budget friendly, unbelievably easy to make and it is a hit with the children.

 
Ingredients
4 medium potatoes (you’ll need about 2 potatoes per person)
1 onion finely chopped
2 cloves of garlic finely chopped
2 large ripe tomatoes or ½ can chopped tomatoes or 1 tablespoonful tomato paste
2 medium carrots scraped and cut in rounds
2 tablespoonfuls celery finely chopped (if liked)
2 tablespoonfuls parsley finely chopped (if liked)
½ cup olive oil
Salt, pepper
 

Directions

Put the oil in a large bottomed pot and sauté the onion. Add the rest of the ingredients, a glass of water and let it simmer until the potatoes are very soft. Check now and then to make sure that there is enough water so that the potatoes don’t burn. There should be quite a lot of sauce left.

Serve hot with feta cheese, some Kalamata olives and fresh crusty bread.
