Eggplants can sometimes be a little bitter. You can slice them rather thinly (about 1 millimeter) and place them in a bowl of water with 2 – 3 tablespoonfuls of salt and leave them for about 30 minutes. You then strain them and squeeze them to remove the extra water.

Alternatively you can sprinkle them with salt and leave them for about 30 minutes. Then you rinse them well and squeeze them to remove the extra water.

This not only does it remove the bitterness, but it also prevents the eggplants from soaking up too much oil when you fry them.
