Roast pork or beef or even lamb with lemon, oregano and potatoes, is a Sunday dish that draws the family together round the table. It doesn’t need to be an expensive cut of meat to break the family budget. Brisket or something similar is fine. Just make sure you have fresh lemons!
Ingredients 1 – 2 kilos pork or beef (it depends on how many people have to be fed) About 1 ½ kilos of potatoes (again it depends on the number of people) ½ cup white wine 2 lemons – juice 1/3 cup olive oil to sauté the meat ½ cup olive oil for the baking pan ½ teaspoon oregano Salt, pepper
Directions
Put a pan on the fire and add 1/3 cup of olive oil. When the oil is hot, add the meat. Sauté it on all sides until there is a nice brown colour all over. Add the wine and simmer until it evaporates. Then sprinkle some salt and oregano, and add the lemon juice of one lemon. Let it simmer for a couple minutes and then tip the contents of the pan into the baking pan.
Put the potatoes, peeled and washed, or unpeeled and washed very well, in the pan. If the potatoes are very large you can cut them in quarters. You can also add two halves of the lemons you have squeezed in the pan. Add the rest of the lemon juice in the baking pan, sprinkle some salt and pepper and the oregano. Drizzle ½ cup olive oil over the meat and the potatoes.
Place the pan in a preheated oven and slow roast at 150oC for about 2 hours. Check the meat from time to time, to see if it is done. Cooking time depends on the thickness of the piece of meat and usually beef needs longer to cook.
Serve with a nice green salad, feta cheese and fresh crusty bread. This is a meal fit for a king and of course the queen!
