A salad with lentils is healthy and a bit unusual, but will become a firm favorite. Lentils are a very good source of cheap protein owing to their high protein content. They also contain dietary fiber, folate, vitamin B1, minerals and are a good source of iron.

 

 

 

 

 

Ingredients
1 cup lentils
½ tomato chopped
½ small cucumber chopped
½ red bell pepper chopped
½ green bell pepper chopped
½ cup parsley finely chopped
1 tablespoonful mint finely chopped
1 medium onion chopped
2 green onions sliced
½ cup olive oil
3 tablespoonfuls vinegar
fillets of smoked herring
Salt

 

Directions

Put the lentils in a colander and wash well under running water. Put 1 – 3 cups water in a pot and add the lentils. Let them simmer until they are soft but not mushy. That will take about 45 minutes, but the time differs from lentils to lentils. Taste them from time to time to see when they are done. When they are soft, drain them well and place them in a serving platter. Add some salt and all the other ingredients. Drizzle the oil and the vinegar. Mix well. If you wish you can add a few fillets of smoked herring and serve.
