A nice, healthy and filling salad, which can be enjoyed by everybody, vegetarians included. Fresh vegetables and good oil do the trick. You can mix and match the vegetables to suit your taste.






2 zucchini
2 potatoes
1 bunch broccoli
2 carrots



Wash the vegetables well and place them in a steamer and cook for about 30 minutes. Prick them with a knife to see if they are done. If you don’t have a steamer, you can simmer them in a little water.

When the vegetables are al dente soft, place them on a platter and drizzle good quality olive oil and lemon juice, and sprinkle some salt. If you like you can add finely chopped parsley, thyme, oregano or any other herbs you like.

This salad can be also eaten as a light lunch, and can be accompanied by some feta cheese and fresh bread.
