It can make or break the dish. It is difficult to give accurate measurements for salt and pepper – it is more a matter of taste. You may like your food a bit more salty, or a little less, or you may use ‘light’ salt or regular, coarse or fine sea salt, organic or kosher. The first and perhaps the only rule is: taste as you go along. Add a little salt at a time and taste again until you are satisfied with the result.
