Spaghetti with fried eggsThis is my personal comfort dish! I can’t even remember when, how and why I had made it, but it has been a faithful companion for over forty years! I usually use left-over spaghetti warmed up in the microwave oven. Nothing goes to waste and you can have dinner ready in a matter of minutes. I don’t think you need exact quantities. If you have to feed your family, then boil as much spaghetti as you need, and fry one or two eggs per person. Grate some cheese and you are set!

 

 

Ingredients
Spaghetti
Eggs
Grated cheese
2 – 3 tablespoonfuls olive oil
2 tablespoonfuls butter
Oil for frying the eggs
Salt, pepper

 

Directions

If you don’t have left over spaghetti sitting in the fridge, you can boil as much as you need, according to the directions on the package. Drain the spaghetti. Put 2 – 3 tablespoonfuls of oil and 2 tablespoonfuls of butter in the pot and let it get hot. Return the spaghetti to the pot and mix it with the butter.

Fry one or two eggs per person in a little oil. Serve the spaghetti on a plate. Sprinkle some pepper and grated cheese on top of the spaghetti. Place the egg or eggs on top and sprinkle some salt and pepper and more grated cheese if you wish.

A couple of slices of toasted bread are a must.
