Stock up on spices and herbs. A low-fat, low-salt diet benefits immensely by the addition of spices and herbs. Remember to finely crush dried herbs before adding to your dish. And of course you need only about 1/3 of the amount in dried herbs as compared with the fresh ones.
The rule of thumb is to keep it simple. Avoid using more than 3 herbs and spices in one dish, except if the recipe stipulates otherwise. However, in Indian cooking 10 or more different spices are used in one curry dish!
