This is an unusual recipe using minced squid, and it is very tasty. These little squid balls can be eaten as a snack and they make a full meal if accompanied by French fries and a huge salad.

 

Ingredients
½ kilo squids (cleaned)
1 egg
2 tablespoonfuls parsley finely chopped
2 tablespoonfuls chives finely chopped
2 tablespoonfuls spearmint finely chopped
2 tablespoonfuls minced green bell pepper
1 small chili pepper minced (if liked)
1 small onion finely chopped
2 cloves garlic minced
About ¾ cup dry breadcrumbs
2 tablespoonfuls ouzo or white wine
2 tablespoonfuls olive oil
1 tablespoonful Terriyaki sauce
Salt, pepper
Oil for frying

 

Directions

You should buy about 600 – 700 grams, so that you have about ½ kilo left after cleaning them. It isn’t important if you have more or less than ½ kilo squid. You can add and subtract ingredients according to the quantity of squid you have on hand and your taste.

You can either clean the squid yourself, ask your fishmonger to clean them for you or you can buy frozen sliced squid. Roughly mince the squid (you should have pieces of squid) and place them in a colander to drain as much as possible. Then place the squid in a bowl and add all the rest of the ingredients and mix them well. The mixture should be on the stiff side, so that it holds together. If needed, you can add a few more breadcrumbs. Put the bowl in the fridge for about one hour.

Wet your hands lightly and form small balls, the size of walnuts. Put some oil in a pan, and when it is hot add the squid balls and fry them until they are golden brown all over. Put them on absorbent paper as you take them out of the pan.

You can serve them with a tomato sauce, mayonnaise or yogurt sauce like tzatziki.
