Tart with leeks, bacon and cheeseThis is a tasty tart that uses few ingredients and is very easy to make. You can make your own dough, or you can use ready bought to save time. It can be eaten for lunch accompanied by a large green salad or as a snack.

 

 

 

 

 

Ingredients for the dough
3 cups flour
1 teaspoon salt
½ cup yogurt
1 egg, lightly beaten
½ cup oil
1 teaspoonful baking powder
A little lukewarm water

 

Ingredients for the filling
2 – 3 leeks white part sliced thinly
4 tablespoonfuls oil
3 tablespoonfuls cream
3 tablespoonfuls milk or water
1 egg beaten
3 – 4 slices of bacon cut into strips
1 – 2 cups grated cheese of your choice (gouda)
Salt
Pepper

 

Directions

Put all the ingredients for the dough in a basin and knead adding a little lukewarm water at a time, until you have a soft elastic dough. Wrap the dough in some shrink wrap and let it rest while you prepare the filling.

Put the oil in a pan and sauté the leeks. Add a little water and let them simmer until they are soft. Add a little salt and pepper. Take the pan off the fire and let the filling cool.

Put the egg in a bowl. Beat it, adding a little salt and pepper and the cream. Continue beating the mixture. If it is too thick add a little milk or water.

Brush a tart dish with a little oil. Roll out the dough to fit the tart dish and the sides. Cut off the excess dough.

Empty the leeks on the dough and spread it evenly. Arrange the strips of bacon over the leeks. Pour the cream mixture over the leeks and cover the top with the grated cheese.

Bake in a preheated oven at 180oC for about 20 – 30 minutes.
