Although it is already September, the tomatoes are still red and sweet and this a very good way to enjoy them with a recipe that’s easy, quick, versatile and won’t have you slaving in the kitchen. It is also extremely versatile and you can use extra ingredients according to your taste and your mood! The quantity gives you 2 – 3 generous servings. It is easy to make more or less according to the number of people you have to feed.

 

 

 

Ingredients
3 large ripe tomatoes grated
4 eggs
4 tablespoonfuls olive oil
Salt and pepper
 

Directions

Place the grated tomatoes in a pan and simmer until the pulp is dry, without any visible water. Add the oil, salt and pepper and simmer for 2 – 3 minutes. Beat the eggs, and add to the tomatoes. Mix gently and tease them until the egg is cooked.

Serve with toast and french fries if you wish.

A few suggestions:

If you wish you can sauté a small grated onion in 1 tablespoonful of oil, before adding the tomatoes.

You can add some chopped or sliced pepper (any colour you like).

A small finely sliced chili pepper will make the difference.

Sliced sausage or bacon is also a good addition.

You can add crumbled feta cheese after you take the pan off the fire.

Finely chopped parsley or any other herbs that you like can also be added.
